Goat and figs salted kiss


for 4 

Ingredients

250 g raising flour
5 eggs
10 cl olive oil
10 cl milk
1 tablespoon honey  - optional
100 g fresh goat's cheese
50 g walnut kernels
6 fresh or dried figs, according to taste
Salt and pepper

 
Method
  1. Preheat the oven to 180°C (gas mark 6).
  2. In a large bowl, beat the eggs with the olive oil, milk and honey.
  3. Add the flour and mix together well until you have a smooth batter
  4. Cut the goat's cheese into small pieces and stir into the batter.
  5. Roughly chop the walnuts. 
  6. Cut the figs into pieces if you prefer to have them distributed in the cake, I have placed them not cut as I pretty like the sensation of biting onto the all fruit.
  7. Add them to the batter. Season with salt and pepper.
  8. Pour the mixture into a cake tin lined with baking paper. Bake for about 45 minutes.
  9. Leave to cool slightly before turning out.
I haven't added the honey onto my cake because I am not a big fan of figs and honey together but I know that the traditional recipe has honey so, it is up to you 
Serve warm or cold with a green salad
