Carrot cake with pineapple and walnuts

Sensational, super simple and delicious cake recipe
 
For 6
 
Ingredients
 
250g (1 cup) plain flour
¾ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
200g raw sugar
2 free-range eggs
5 tablespoons cold-pressed oil
250g grated carrot
400g can crushed pineapple ( drain well and discard juice)
65g chopped walnuts

 
 
Method
 
  1. Preheat oven to 175C.
  2. Thoroughly mix together all the ingredients except the carrots, pineapple and walnuts.
  3. Fold in the carrots, pineapple and walnuts.
  4. Grease and flour a cake tin.
  5. Bake in the oven for 35-40 minutes
