Carrot cake with pineapple and walnuts

Ingredients
250g (1 cup) plain flour
¾ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
200g raw sugar
2 free-range eggs
5 tablespoons cold-pressed oil
250g grated carrot
400g can crushed pineapple ( drain well and discard juice)
65g chopped walnuts

5 tablespoons cold-pressed oil
250g grated carrot
400g can crushed pineapple ( drain well and discard juice)
65g chopped walnuts
Method
- Preheat oven to 175C.
- Thoroughly mix together all the ingredients except the carrots, pineapple and walnuts.
- Fold in the carrots, pineapple and walnuts.
- Grease and flour a cake tin.
- Bake in the oven for 35-40 minutes
