QUICHES


The Original "Quiche Lorraine"  was a savoury, open-faced pastry dish with a filling consisting of  an egg and cream custard with smoked bacon.
 I
t  was only later that cheese was added, meat, fish and vegetables. Add onions and you have Quiche Alsacienne.
The bottom crust was originally made from bread dough, but it has evolved into a short-crust or puff pastry crust.
Although quiche is now a classic dish of French cuisine, quiche actually originated in Germany, in the medieval kingdom of Lothringer, under German rule, and which the French later renamed Lorraine ( how could France lets Lorraine and its quiche in Germany ! This recipe deserved a battle :) 

It is the most simple and versatile recipe that I cook all the time, you can eat it hot, warm, cold with a salad, add any vegetables you want, like asparagus, tomatoes, leeks,  broccoli etc...  Easy to bring to parties, picnics and children love it.
