CROCODILE

In northern Australia (which includes the top ends of the Northern Territory, Western Australia and Queensland) the Saltwater Crocodile is thriving, particularly in the multiple river systems near Darwin (such as the Adelaide, Mary and Daly Rivers, along with their adjacent billabongs and estuaries) where exceptionally large (6 meter +) individuals are not uncommon.

Crocodile has been described as a healthy meat due to its overall composition and for being low in fat and high in protein.
It has a mild and delicate flavor, firm texture. It tastes like chicken, no !..... hum... a bit fishy.......well, it is a succulent white meat :)

Ingredients
500g crocodile meat
Lemon grass
Medium size lemon juice
Thyme
Olive oil
Salt and Pepper

 
 Method

Its white flesh is delicate, ,you must not overcook it, otherwise it become a bit chewy. It is a lean meat.
We wanted to have the crocodile without sauce so I decided to prepare it simply in a pan with few drops of olive oil. 
 
Cut the meat into middle size pieces, season with pepper and salt and freshly lemon juice (1 medium lemon0, few leaves of lemon grass,thyme
salt and pepper, 1 tablespoon of olive oil.
Refrigerate this for about 1 hour.
After some time in the fridge, heat oil in a shallow pan and slow fry the meat, turning it as you go for few minutes only.
