Carrots salad with lemon or orange juice
Serve 4
Ingredients:
4-5 beautiful carrots.
1 plump fresh garlic clove, minced.
A small bouquet of flat leaves parsley.
1/2 red onion, finely sliced
Salt and Pepper.
Dressing
2 tablespoons of freshly squeezed lemon juice or the juice of an orange
3 tablespoons of virgin olive oil.

You can prepare this salad 1 day in advance - Cover and refrigerate-
VARIATION :
Moroccan carrots salad.
Instead of lemon juice, prepare the dressing with an orange juice and add 2 tablespoons of cumin - delicious ! -

Method
- Prepare the dressing by whisking together the lemon juice or orange juice, salt and add gradually the oil until well blended.
- With a food processor or a vegetable grater, finely grate the carrots.
- In a beautiful bowl (preferably dark grey or black :) combine the carrots, red onion and garlic and pour the dressing over.
- Toss.
- Sprinkle with parsley.
