CREPES FORTUNATE

Ingredients :

Crepes for 4 gourmets :

250g flour 
1 soup spoon of white  sugar
25cl milk
25cl cider
1 pinch of salt
3 eggs
1tbsp of oil


Sauce :
3 apples, finely sliced
40g salted butter
40g brown sugar
3 tbsp of cider
3 tbsp of cream ( almond cream or soja cream)


Method:

  1. Place the flour into a bowl with the sugar and the salt.
  2. Add the eggs. 
  3. Mix little by little with the milk, then pour, little by little, the cider and whisk.
  4. Add the oil.
  5. Whisk to obtain a mixture of an even consistency.
  6. Set aside for a minimum of 1hour. (preferably overnight).
  7. When the moment arrives to use the mixture, if needed, add a little bit of milk .
  8. Heat a frying pan until medium hot. Melt a little butter in the pan, then add a ladle of batter and swirl to coat the bottom of the pan.
  9. Cook for 1-2 minutes, then flip and cook for a further minute.

For the sauce :

  1. Heat a frying pan until hot, add the butter, sliced apples, sugar and let the apples caramelise a little bit approx. 5-10 minutes.
  2. Add the cider then the cream.
  3. Lower the heat and let them cook for 3-4 minutes until the sauce is thickened then remove the pan from the heat.
  4. Throw a little bit of sauce into half of a crepe
  5. Fold the crepes into quarters or halves and serve.

The first crepes are always a disaster, persevere, and the last ones will be perfect !
