Emu

This has been a revelation for me because first of all it was the first time I've eaten this bird but also his dark red colour like a duke was intimidating.I cooked it simply.
 
The tenderness and texture of emu meat enables it to be prepared in a variety of ways.
It is best prepared lightly grilled or pan fried.
The emu meat is low in fat, it doesn't need to be cooked as long or with a high a temperature as most other meats.

ingredients

400g of raw Emu meat
Salt and pepper
Olive oil


Method

Cut the meat into middle size pieces, season with pepper and salt 
heat oil in a  shallow pan and slow fry the meat, turning it as you go until it turns a little bit golden.
Stay close to the pan as it may cook quite quick !

Emu is best when cooked rare to medium rare.
Buddy it up with a green salad or potatoes puree.
