Octopus with chorizo and white beans
Octopus is really simple to do! The chorizo and white beans work really well with the octopus. it is delicious
Octopus with chorizo and white beans
For four
Ingredients :
1 finely sliced and half large onion roughly chopped.
3 garlic cloves finely cut,
1 bouquet garni and basilic leaves if you have some
1 small bouquet of parsley, roughly chopped
200ml of white wine
350ml of stock (fish or crab or vegetable)
3 tomatoes chopped in small cubes
1 chorizo sausage, sliced
2 tins of drained white butter beans
1 tablespoon of paprika
Salt and pepper
Method :
You can re-heat it the octopus a day after, it will be even better!

350ml of stock (fish or crab or vegetable)
3 tomatoes chopped in small cubes
1 chorizo sausage, sliced

Method :
- Bring a large saucepan of salted water to a boil with the bouquet garni, ½ sliced onion, basilic leaves then pepper and sea salt.
- Using tongs carefully dip the octopus into the boiling water 3 times, then leave it in the water.
- Reduce the heat to a simmer and cook the octopus until it is tender when pierced with a sharp knife (anywhere from 45 to 60 minutes).
- When cooked, remove the octopus and cool to room temperature.
- Cut the octopus into 3 cm pieces.
- Heat one tablespoon olive oil in a heavy based pot and fry the sliced onion until soft, remove from the heat and fry the chorizo until lightly browned.
- Add the wine, and the (fish or crab or vegetable) stock, garlic, chopped tomatoes, the white beans, and two tablespoons of tomato paste, then the soft sliced onion and paprika.
- Let it cook 5 minutes low heat.
- Add the octopus and let is cook, low heat for 10/15 minutes, until hot.
- Add the chopped parsley then add salt & pepper.
