Soupe a l'oignon simply French
Serve 2 gluttons
3 big onions
50g Butter & oil
2tbs flour
3 cups beef stock
200 ml dry white wine
10 slices of toasted bread - 5 medium - 5 small with garlic
200g grated gruyere or cheddar
Salt&pepper
Garlic
Can be prepared and re-heated, no problem
Can be frizzed for a while
This french recipe is usually made at 2am or 3am when you are at the end of a party
when everybody needs to add a simple potage in their body :) and it is just a pure plaisir !

10 slices of toasted bread - 5 medium - 5 small with garlic

- Peel and cut in two the onions and thinly slice them all.
- In a big casserole put 2 tbs of butter and 2 tbs of oil and fry the onions until transparent.
- Dust with flour and fry until lightly browned, stirring all the time with a wooden spoon.
- Season with pepper.
- Gradually, add the wine and then the beef stock.
- Season with salt and bring to the boil, then simmer for 26 minutes.
- Toast the slices of bread.
- In each of the soup bowl put :
- At the bottom 3 slices of bread and add 1tbs of grated cheese
- And on the top add 3 small slices of bread with grated garlic and 1tbs of grated cheese
- Pour the onions soup into the soup bowls.
- Sprinkle with the rest of the cheese and brown in the oven for 11 minutes
