Vegetables and Cumin Crepe

This vegetarian crepe is easy to prepare, crispy and full of flavours, has Moroccan spices mixed with vegetables and goat cheese. Delicious and healthy !

Ingredients

8 Brick sheets or if you can’t find it, use Filo
500g fresh spinach or you can use frozen leaves
2 carrots
1 Zucchini
1 bouquet of fresh coriander (or frozen )
2 garlic cloves
1 soupspoon grinded ginger
1 soupspoon of cumin seeds
100g fresh Goat cheese
Olive or grape oil
salt and pepper

 
 
Method
  1. Cook the spinach for 1 or 2 minutes,
  2. Peel and grate the carrots and the zucchini,
  3. Crush the garlic,
  4. Cut the coriander in small pieces,
  5. In a container, mix well all the ingredients with the coriander, cumin seeds and the ginger,
  6. Add salt and pepper to taste.
  7. Join 2 brick sheets together so it is less fragile and brush lightly them with oil, so you have four bricks composed of 2 sheets each.
  8. On each brick add ¼ of the mix in the middle then add 3 or 4 teaspoons of goat cheese.
  9. Fold the brick so the mixture can not escape. 
  10. Brush each parcel with olive oil. 
  11. In a hot pan lets cook one or two bricks 3 minutes each side, beginning by the side with thewelds.
  12. Then cook the remaining bricks.
 
Serve with a green salad
