WHOLE BAKED  WHITE FISH
Whole baked fish is the easiest, most delicious way to cook almost all white fish.

Ingredients :
2 people

1 medium size fish, gutted and scaled
2 big tomatoes chopped
1 onion chopped.
1 small bouquet of flat leaf parsley finely chopped
Olive oil
2 tablespoons of white wine (Chardonnay or Pinot grigio)
Salt and pepper
 
Optional : walnut oil - truffle oil
 
Mixture :
Fresh oregano, thyme, sage, basil, marjoram, a little bit of rosemary from the garden if possible, otherwise use dry mixed herbs
2 cloves of garlic crushed
1 tablespoon of crushed ginger
1 tablespoon of curcumin

 
Methods

  1. Preheat the oven to 200C.
  2. Combine all the herbs, crushed ginger, salt and pepper in a bowl.
  3. Drizzle this mixture with olive oil and mix well.
  4. Add a splash of Walnut oil then set aside.
  5. Give the fish a rinse in salt water, pat dry and season it inside and out with salt, pepper and olive oil.
  6. Spread half of the mixture in the cavity of the fish.
  7. Spread the other half of the mixture on the exterior of the fish.
  8. Display the onion, tomato, and garlic with 1 tablespoon of olive oil, 2 tablespoons of white wine and salt and pepper all in the foil.
  9. ( you can add in this bed a little bit of salad; see images)
  10. Fold the sides of the foil over the fish, covering completely, seal the packet closed.
  11. Place the package on a baking dish.
  12. Place it in the oven and bake for 20-26 minutes @ 200C until cooked through.
 
Once cooked, I recommend serving with cooked green beans and a glass of cold chardonnay.
